Here is a list of links I've found around the web to projects other people have been doign with the UBW design.
Note that some of these are based off of purchased UBWs from SparkFun, and many are 'home-grown' designs that were custom made. If you find any more, please let me know and I'll add them to the list.

Paul has made a UBW based board that has hardware to talk to an LCD panel, a uMIRF v2 radio and DOSonChip memory interface.
3v0 has a UBW based board that can talk to an RS-485 network (also here)
